I made something new last night, and it went over ok. Would have been better if I hadn't over-cooked them!
Ingredients (per egg cup):
2 thin slices of deli-sliced turkey or ham
1 medium raw egg
1 tablespoon shredded cheese
sprinkle of dried spinach or parsley
sprinkle of chives
Directions:
Preheat oven to 350 degrees F. Pan-spray a muffin pan so these don't stick. Line each muffin cup with 2 slices of the turkey or ham, leaving an overhang for later. Crack an egg in each muffin cup. Sprinkle on the spinach, parsley and chives. Bring up the turkey/ham overhang to cover the egg and greens. Place the cheese on top (it helps to hold the overhang in place). Bake for 13-16 minutes, depending on how well you like your egg. Spoon out and enjoy!
NOTE: I baked mine for 20 minutes, then I thought I detected a little wiggle so baked for another 3 minutes. WAY too long!
The Kid, who is a really picky eater and doesn't like to try new things, ate his up. Served with crackers and carrots and fresh raw zucchini slices.
This is a nice way to prepare eggs for the family when everyone wants something different. The Kid got turkey, egg and American cheese (doesn't like greens, especially chives, that are dried but will eat fresh raw spinach in the Spring). Hubby got turkey, egg, spinach, parsley and chives, with goat and sheep cheese on top. I got turkey, egg, a tiny bit of spinach, chives, with Amer cheese. I made 2 for each of us. Then the Kid and I got gluten-free crackers, and Hubby ate triscuit-type wheat crackers. Adding the veggies made this a healthy meal! I took pix so I'll try to add them soon.

Hot dogs in corn tortillas
I didn't feel much like preparing anything fancy yesterday. Nope, not even the crockpot! So after we dropped off my car at the repair shop yesterday, we headed home, and I took out hot dogs from the fridge. THREE packages: the Kid gets organic nitrite-free. I get turkey dogs. Hubby gets plain ole regular cheapo from Sam's. We didn't have buns for Hubby so I improvised. We used corn tortillas.
First, I boiled the Kid's 4 hot dogs because I didn't want the nitrites from the other dogs in the boiling water. About 3 minutes before they were cooked, I heated 4 corn tortillas in the oven to soften them. The Kid spread ketchup on each tortillas and rolled up each dog. Paired with zucchini and carrots, it filled him up.
Then I boiled Hubby's 4 dogs plus another 4 for his lunch today. Same thing: I heated the corn tortillas in the oven to soften so they wouldn't break while rolling. Adding ketchup to his, he rolled up his 4, and with zucchini and potato salad (that I'd made earlier in the day), he felt quite full too.
On to me. Same basically, but I melted cheese on my tortillas, and added mayo and spicy brown mustard before rolling. I meant to add chopped onions but forgot about them until my last bite! I also had potato salad because, well, I love my potato salad!
I think I'll have some now.
Anyway, the point of this post is that "necessity is the mother of invention". Didn't need to buy hot dog buns for Hubby then buy gluten-free buns for the Kid and I. Plus it's a lot cheaper (we buy tortillas in bulk at Sam's.)
On the menu tonight is turkey egg cups! Hopefully I'll remember to take a pic before we gobble them down.

Recipe: Basil Pork Chops
I don't like pork chops. I had a bad experience with some in the early 80's and haven't eaten them since. But they were on sale this week at King Soopers, and Hubby likes them, so I did this recipe for him, in the crockpot as usual. HE said it tasted pretty good.
Ingredients:
4 pork chops
1 cup water
1 tablespoon whole cloves
1/2 medium onion, chopped
2 tablespoons minced dried basil
2 tablespoons olive oil
1 bell/sweet pepper, sliced into strips
Directions:
Spray or oil the bottom of the crockpot. Sprinkle the cloves on the bottom of the crockpot. Place the porkchops and onion in the crockpot. Add water. Mix basil and olive oil to a paste and spread across the top of the chops. Cook on low for 6-8 hours. Add pepper about an hour before serving. (At this time I also added about a large handful of whole mushrooms because Hubby loves mushrooms.)
The porkchops came off the bone so be careful when serving. I'm sure this could be modified to pan frying or baking.
I modified a holiday ham recipe from a scandanavian cookbook.

I also made baked potatoes last night, and a pot-roast (I sure do love my double-crockpot!). The Kid ate a baked potato with lots of sour cream, carrots, pumpkin seeds, and GF butter-bread. I'm makig taco meat tonight to serve with corn tortillas (for Hubby and me) and for the Kid, who can't have corn and doesn't like beef, he'll get baked beans with an organic hot dog cut up in them. For tomorrow's breakfast, I'll place some GF oats and amaranth in a crockpot with water, which will cook overnight. Yum!

We've named our quail: Ella is the one with the bad eye (which is getting better) because she loves to sing (after Ella Fitzgerald - named by Hubby). Pecka is the other female, named by the Kid because she likes to peck at the blue plastic of their cage. I named who we think is the boy ... Nervous Ned, because he likes to pace. He spent most of yesterday trying to fly up to the perchs/poles towards the top of the cage, and by late afternoon and about 40 tries, he's succeeded twice. Odd quail.
No eggs last night or this morning. Could be because we moved the cages from the living room to the garage. They are right across from the Angora Rabbit so they can keep each other company. Also, so we don't track hay and birdseed into the apartment. Quail don't like to be moved much so they must be settling down. Blanca, the bunny, was a bit wary about her noisy neighbors but this morning seemed to be better about it.

We bought an imitation Wii for Christmas... 2 actually, called "Wireless Sport Plus" and "Wireless Fit". Finally got them hooked up yesterday, and had some fun last night. Hubby and the Kid played horseshoes, and then while the Kid got ready for bed, Hubby and I played bean-bag toss. It was great fun, but we really shouldn't play them so late at night. Took forever to get the Kid calmed down to get to bed. Wonder if he slept last night? He just got up so I'll ask him when he's coherent. (He says "good".)
Hopefully, we can use these "games" during the day to help the Kid get rid of some of his extra energy, and help Hubby and I get healthy.
I've been sticking with being gluten-free, although I crave pizza and burgers pretty often. Found a great GF sub for wheat pizza crusts, but not thrilled with the GF burger buns. Still working on it. Meanwhile, I've considerably cut back on cow's milk products. Still love my swiss, provolone and mozzarella cheese tho! My weight loss seems to have stopped; probably because I'm sucking on cough drops all day. My mouth still hurts from my oral surgery last week; wonder of my cough-drop sucking is contributing to that?

Recipe: Norwegian Beef Stew
I found this recipe in one of my husband's family's cookbooks, and wow, is it easy! Not the most flavorful meal, but nice and filling.
Ingredients:
1 pound fresh beef
1 pound fresh pork (or 1/2 pound salt pork)
1 medium onion
4 raw potatoes
salt/pepper
Directions:
Dice beef and pork. Place in medium to large pot, cover with water, and simmer for 1 hour. When tender, add onion and potato. Season as preferred. Cook until onion and potatoes are tender and broth is thickened (from the potato). Carrots or parsnips may be added.

Recipe: Cumin Chili
Finally got around to posting pic 12/31/09 - doesn't it look yummy!The temp last night when Hubby came home from work was 2 degrees F. Brrrr... yes, cold. Glad I had made this! It was hot and satisfying and a great evening meal.
So... I tried cooking with cumin for the first time. Interesting. Very smoky strong smell, and added something else (I guess, another "layer of texture") to the chili. Here's what I did:
Ingredients:
1 pound lean ground beef
1 tablespoon olive oil
1 small onion, diced
salt/pepper to taste
3 teaspoons chili powder
1 teaspoon cumin
1 can beans, drained (your choice what kind)
tiny pinch red chili pepper flakes
1 tablespoon dried bell pepper
1 tablespoon dried garlic granules or flakes
3 cans diced tomatoes, with liquid
3 cans water
2 cups pasta (I use macaroni, ziti or broken spaghetti)
Directions:
In a large stew-pot, brown ground beef and drain. Add 1 tablespoon olive oil plus the diced onion. Cook until translucent. Add salt/pepper (but I don't cuz I no likey!), chili powder, cumin, beans, and red pepper flakes. Cook for a few minutes, then add the canned tomatoes, bell pepper, garlic, and water. Simmer on low for 30-45 minutes. About 10 minutes before serving, add the pasta to cook.
I'm from KY, and grew up with pasta in my chili. I know, most people think that's horrible, and even worse ... I use ground beef instead of stew meat. However, this is basically the recipe I've used for years (except for adding the cumin and red pepper flakes) so this is what I like and what Hubby has gotten used to.
Note: I also added about 2 tablespoons of dried soup vegetables. They don't change the taste of the chili, but I like knowing I've added extra vitamins and minerals to my dinner. You, of course, don't have to.
Serve the chili with sour cream, grated cheese and saltines to crumble. Tobasco on the side. Maybe chopped onions and/or scallions. Yummm!
Made 7 servings.
Leftovers:
Sometimes I cook the pasta separately - regular for Hubby and gluten-free for me. When I do that, here's what I do with the leftovers: I fill up the large section of a 2-compartment plastic container, and add corn chips in the smaller section - good satisfying lunch for Hubby. Sometimes we spoon leftover chili in a taco shell, and sometimes, it's delicious in an omelet.
Personally, I had a container of chili for breakfast this morning!
